About the tour

On this tour we have many food and wine stops and we taste the foods that made Roma famous around the world. As we taste the foods we learn the stories of how they came to be. What is the difference between Pizza and Penza, Carbonara and and Gricia. We present the evolution of food. 

While you are dining on  we can discuss the stories of the possible creatiion of Carbonara, our most controversail pasta.  Under the name Carbonara a recipe first appeared in 1954 and some credit the American Soldiers with it's invention. 

The Truth is that it is probably descende from pasta cacio e uova, a Neapolitan dish of pasta tossed with melted lard, beaten raw eggs, and cheese, as documented in Ippolito Cavalcanti's 1839 Neapolitan cookbook.
